For many years in my family, strawberry shortcake was always made entirely from scratch. The biscuits or cakes were mixed by hand, the strawberries sliced and lightly sugared to release their juices, and the whipped cream beaten until it formed soft peaks. Ingredients-Cake
1 (20‑ounce) 7‑Up Lemon Cake, store‑bought
1 carton fresh strawberries (about 1 pound), sliced
1 tablespoon sugar (for strawberries)
Ingredients-Homemade Whipped Cream
2 cups heavy whipping cream
2 tablespoons sugar
Instructions
Slice fresh strawberries and place in bowl.Â
Sprinkle with 1 tablespoon of sugar and gently toss.Â
Allow strawberries to sit for 10–15 minutes so natural juices form light syrup.
Using chilled mixing bowl, beat heavy cream together with 2 tablespoons sugar until soft peaks form.Â
Whipped cream should be smooth and fluffy.
Slice 7‑Up Lemon Cake into even pieces and arrange on dessert plates or shallow bowls.
Spoon generous dollops of homemade whipped cream over cake slices.
Finish by topping cake and cream with spoonfuls of sweetened strawberries and their juices.Â
