Shrimp and Catfish Couvillion Recipe: A Classic Cajun Comfort Dish with Rich Tomato Broth and Tender Shrimp

Shrimp and Catfish Couvillion is an elegant and satisfying seafood dish that captures the heart of Louisianna. This beloved Cajun classic combines succulent shrimp and catfish with a rich tomato-based sauce flavored with onions, celery, garlic, butter, and seasonings.

We always made the biggest pot of buttered rice, with plenty of salt. The Dutch oven pan we cook in has seen many years of cooking. It has cooked many a meal, smelling of fried shrimp, oysters, of gumbo, and our favorite, garlic shrimp and rice. And don’t forget the star of the show, the Couvillion.

The buttered white rice is simple, yet elevated, making our lovely dish equally welcoming at home on a weeknight dinner table or a special family occasion. The aroma always brings back memories of a dear friend I met many years ago that introduced me to this little beauty. Her family was from Southern Louisiana, and every time I went to visit her, the entire house smelled of goodness, of tomato broth, of Cajun spices, of onions, garlic and celery sizzling in extra virgin olive oil.

Best yet, my dear Cajun friend always had a hunk of the freshest French bread and a tub of golden rich butter at the ready to sop up that Couvillion magic. A pot simmered gently on the stove while family gathered around the table and told stories of fishing, of crabbing, and most of all, of cooking. She had sisters that sometimes joined us and then there were cousins, and aunts and anybody else that happened by. It was always a big group that tried to outdo each other as we supped on that astounding and luscious enchantment.

Shrimp and Catfish Couvillion is one of those recipes that proves simple ingredients can create extraordinary flavor. The sweetness of the tomatoes blends with the savory vegetables and the delicate shrimp and catfish, while Tony Chachere’s seasoning provides that unmistakable Cajun flair. As the sauce slowly cooks, the vegetables become tender and the flavors deepen into a rich, comforting broth that begs to be spooned generously over hot buttery rice.

We found that this dish is lovely and versatile, making it extra special. It can be made for a casual family supper or served to guests with warm French garlic bread and a crisp green salad. The sauce is hearty on its own, yet light enough to enjoy year-round. We usually make it in the summer, but by autumn, we’re craving just one more bowl. Every bite makes us close our eyes, savoring a taste of Louisiana hospitality and tradition.

For an authentic meal, we serve Shrimp and Catfish Couvillion with toasted French bread spread generously with Kerrygold Garlic & Herb Butter. If Kerrygold is unavailable, regular butter mixed with fresh parsley, minced garlic, and a pinch of salt makes an excellent homemade alternative. The bread is perfect for soaking up every last spoonful of the delicious tomato broth. For all those stupendous meals we were served in Louisianna, for the grace and beauty they gave us. Shrimp and Catfish Couvillion Recipe

Description: Shrimp and Catfish Couvillion is Louisiana comfort food at its finest; simple, satisfying, and filled with the rich flavors of Cajun cooking. The combination of tender shrimp, catfish, and buttery vegetables, in a deeply flavored tomato broth served over rice creates a meal that is special and wonderfully familiar. Watch it though, Shrimp and Catfish Couvillion has been known to hop ship and land onto someone else’s plate!


Ingredients

  • 2 pounds large shrimp, peeled and deveined

  • 4 Catfish Fillets cut into large bite size pieces

  • 2 sticks (1cup) butter

  • 2 large yellow onions, diced

  • 3 celery stalks, diced

  • 4 cloves garlic, minced

  • 1 large can (28 ounces) crushed tomatoes

  • 1 can (14.5 ounces) diced tomatoes

  • 2 cups chicken stock

  • 2 teaspoons Tony Chachere’s Original Creole Seasoning

  • ½ teaspoon black pepper

  • ½ teaspoon sugar (optional, to balance acidity)

  • 2 bay leaves

  • 1 Tablespoons chopped fresh parsley (optional)

  • Hot cooked white rice, for serving


For the Garlic Bread

  • 1 large French bread loaf

  • ½ cup Kerrygold Garlic & Herb Butter, softened


Alternative Homemade Garlic Butter:

  • ½ cup softened butter

  • 2 cloves garlic, minced

  • 1 tablespoon chopped parsley

  • Pinch of salt



For the Buttered Rice:

  • 3 cups long-grain white rice, cooked

  • 4 tablespoons butter

  • ½ teaspoon salt


Directions:

Prepare the Rice:

  1. Cook rice according to package directions.

  2. Once cooked, fluff with a fork.

  3. Stir in 4 tablespoons butter and salt.

  4. Cover and keep warm.



Directions:

Prepare the Couvillion:

  1. Melt the butter in a large Dutch oven or heavy pot over medium heat.

  2. Add the onion and celery and sauté for 8 to 10 minutes until softened and translucent.

  3. Stir in the garlic and cook for 1 minute longer.

  4. Add the crushed tomatoes, diced tomatoes, stock, Tony Chachere’s seasoning, black pepper, sugar (if using), and bay leaves.

  5. Bring the mixture to a gentle boil, then reduce heat to low.

  6. Simmer uncovered for 25 to 30 minutes, stirring occasionally, until the vegetables are very tender and the flavors have blended together.

  7. Add the catfish and shrimp and cook for 3 to 4 minutes, just until the shrimp turn pink and are cooked through.

  8. Remove the bay leaves and stir in the fresh parsley.


Prepare the Garlic Bread

  1. Preheat oven to 375°F.

  2. Slice the French bread lengthwise.

  3. Spread generously with Kerrygold Garlic & Herb Butter.

  4. Place on a baking sheet and bake for 8 to 10 minutes until hot and lightly golden around the edges.

  5. For homemade garlic bread, combine softened butter, garlic, parsley, and salt before spreading on the bread.


Serving Suggestions

Spoon a generous helping of hot white rice into shallow bowls and ladle the Shrimp and Catfish Couvillion over the top. Be sure to include plenty of the rich tomato broth. Serve alongside warm garlic bread for dipping.
