During the summer months, when fresh Gulf shrimp are plentiful, this dish celebrates the sweetness and delicate flavor of fresh seafood with a robust garlic Parmesan cream sauce that is both elegant and always a delight for our family and our guests.

In the cooler months of fall, winter, and spring, it is a family favorite that warms the table and fills our home with that inviting smell of butter, garlic, and Parmesan. Now, what’s not to love! We absolutely adore that it is simple and easy to make. And, best of all, it’s appealing for a casual weeknight supper or a very special gathering with family and friends who have brought that someone special to dinner for us to meet.

Shrimp Fettuccine with Garlic Parmesan Cream Sauce Recipe


Description: Oh, how you’ll love this dish of sweet, tender shrimp and rich, creamy, buttered fettuccine immersed in grated Parmesan cheese! The garlic and onions go swimmingly with the luscious shrimp, and the Cajun spices add just the right touch of Louisiana flavor and goodness. Watch it though, your bowl may disappear before your very eyes!


Ingredients:

For the Shrimp:

  • 1pound large shrimp, peeled and deveined

  • 1 teaspoon Creole seasoning

  • 2 tablespoons olive oil

  • 4 tablespoons butter


For the Sauce:

  • 1 stick (½ cup) butter

  • 1 medium sweet onion, finely diced

  • 6 cloves garlic, minced

  • 2 cups heavy whipping cream

  • 1 cup half-and-half

  • 2 ½ cups freshly grated Parmesan cheese

  • ½ teaspoon black pepper

  • ½ teaspoon Creole seasoning

  • 1 ½ Chicken bouillon cubes


For the Pasta:

  • 1 pound fettuccine pasta

  • Water for boiling

  • 1 tablespoon salt


Directions:

  1. Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until al dente. Drain and set aside.

  2. Season the shrimp with the Creole seasoning. Heat the olive oil and 4 tablespoons butter in a large skillet over medium-high heat. Add the shrimp and cook only 1 to 2 minutes per side until pink and just cooked through. Remove shrimp from the skillet and set aside.

  3. In the same skillet, melt the stick of butter. Add the diced onion and cook until tender, about 4 to 5 minutes. Stir in the garlic and cook for 30 seconds more.

  4. Pour in the heavy cream and half-and-half. Bring to a gentle simmer, stirring frequently. Add the Parmesan cheese, black pepper, and additional Tony Chachere’s seasoning. Stir until the cheese melts and the sauce becomes smooth and creamy.

  5. Return the shrimp to the skillet and cook for about 1 minute, just long enough to warm through.

  6. Add the cooked fettuccine and toss gently until every strand is coated with the creamy Parmesan sauce.

  7. Sprinkle with fresh parsley and serve immediately.

For the most tender shrimp, avoid overcooking. The shrimp should be added back to the sauce only long enough to warm through. This keeps them juicy and flavorful while allowing the rich Parmesan cream sauce to remain the star of the dish.
