Grilled Ribeye Steak with Mashed Potatoes Recipe

Father’s Day is a very special occasion to honor our fathers, grandfathers, stepfathers, and father figures who have guided, supported, and loved their families through the years. Across America, families gather around backyard grills, dining room tables, lakeside cabins, and favorite restaurants to celebrate the men who have helped shape their lives. While we may give gifts, our fathers will tell us that spending time together over a good meal is what they cherish most. I remember my daddy saying, “don’t get me anything.” Of course, that made me want to get him something even more!

Father’s Day is a usually a day of relaxation and simple pleasures. It may begin with a leisurely morning with a continental breakfast like Croissants, Cheese Danish and Blueberry muffins followed by watching a baseball game, taking a fishing trip, which my dad loved to do, enjoying time outdoors, or just sitting together on the patio or breezeway sharing stories and laughter. Our meal was always the centerpiece of our celebration, bringing us around the table for family recipes that created wonderful memories that have lasted a lifetime.

In the United States, cookouts and family gatherings are common, as in other countries such as Canada, the United Kingdom, and Australia. Regardless of where it is celebrated, the day serves as a reminder to express gratitude for sacrifices, love and wisdom that fathers provide throughout their lives for us. I loved to spend time with my father; he would often eat and then go sit in his easy chair for a spell. In fact, I have adopted his custom of doing just that!

This year, we had grilled ribeyes cooked over charcoal that created a beautiful crust on the outside while keeping the inside tender, juicy, and perfectly medium-rare. The smoky aroma from the grill added a classic steakhouse quality that made every bite delectable. Thinly slicing the ribeyes against the grain ensured maximum tenderness, allowing the buttery juices to mingle with the creamy mashed potatoes beneath. The potatoes served as the perfect foundation for the sliced ribeye steaks, soaking up their savory juices. And for the salad, we tossed generously with Panera Asian Sesame Dressing, which has a lightly sweet and tangy flavor with hints of sesame that complement the smoky grilled ribeyes just right. The bright, crisp vegetables helped balance the meal, making this salad a refreshing side dish that rounded it out wonderfully!

This charcoal-grilled ribeye dinner is hearty and satisfying, and worthy of the occasion, and just what my dad would have ordered! Tender medium-rare ribeyes, grilled beef sausage, creamy mashed red potatoes, and crisp sweet kale salad create a balanced and comforting menu. Topped with rich Kerrygold Garlic & Herb Butter and served family-style, this meal is perfect for gathering around the table and celebrating. After dinner, I even make a little to-go for the fathers in our family. We finished with pecan pie dipped in chocolate, a decadent brownie, and key-lime pie, so scrumptious! Charcoal-Grilled Allegro Ribeyes with Kerrygold Garlic & Herb Butter
Description: These charcoal-grilled ribeyes are the centerpiece of this Father’s Day feast. Marinated in Allegro Hot & Spicy Marinade for several hours or overnight, the steaks develop a rich, savory flavor with just the right amount of spice. They are tender and juicy, so watch your plate, whole steaks have been known to be lifted off in the blink of an eye.

Ingredients:
3 large ribeye steaks, 1-inch thick
1 bottle Allegro Hot & Spicy Marinade
1 package skinless beef sausage links
¾ stick Kerrygold Garlic & Herb Butter (¼ stick per steak)
Freshly ground black pepper, to taste
Charcoal grill prepared for medium-high heat
Instructions:
Place the ribeye steaks in a large container or zip-top bag and cover with Allegro Hot & Spicy Marinade. Marinate for at least 2–3 hours or overnight in the refrigerator.
Remove steaks from the refrigerator approximately 30 minutes before grilling.
Prepare a charcoal grill and allow the coals to reach medium-high heat.
Place the ribeyes and beef sausage on the grill.
Grill the ribeyes approximately 3½ to 4 minutes per side for medium-rare. Adjust slightly depending on the thickness of the steaks and grill temperature.
Grill the sausage links until browned and heated through, turning occasionally.
Remove the steaks and sausage from the grill and allow the steaks to rest for 5–10 minutes.
Place ¼ stick of Kerrygold Garlic & Herb Butter on each steak while resting.
Slice each ribeye thinly against the grain.
Serve the sliced steak over a bed of mashed potatoes with grilled sausage and sesame kale salad on the side.

Creamy Mashed Potatoes

Description: These creamy mashed potatoes are simple comfort food at its finest. Leaving the skins on the red potatoes adds texture, color, and a rich potato flavor that is beautiful with grilled meats. Butter and half-and-half or heavy cream create a smooth, velvety consistency while allowing the natural flavor of the potatoes to remain the star. But do watch it, someone hungry will swipe them clean off your plate!
Ingredients
8 medium to large red potatoes, skins left on
Water for boiling
1 tablespoon salt for cooking water
1 stick butter
1 cup half-and-half or heavy whipping cream
Salt, to taste
Black pepper, to taste
Instructions:
Wash the potatoes thoroughly and slice into large chunks, leaving the skins on.
Place potatoes in a large pot and cover with water.
Add 1 tablespoon salt and bring to a boil.
Cook until fork tender, approximately 20–25 minutes.
Drain the potatoes thoroughly.
Return potatoes to the warm pot.
Add butter and half-and-half or heavy whipping cream.
Mash until smooth and creamy.
Season generously with salt and black pepper to taste.
Keep warm until ready to serve.

Sweet Kale Salad with Panera Asian Sesame Dressing

Description: The sweet kale salad provides a fresh and colorful contrast to the richness of steak and potatoes. A blend of kale, cabbage, and broccoli stems creates a crisp texture, while the included toppings add sweetness and crunch. The variety of textures makes every bite refreshing, and just right for a salad thief, so beware!
Ingredients:
1 Sweet Kale Salad Kit
1/4 bottle Panera Asian Sesame Dressing
Instructions:
Empty the salad kit into a large serving bowl.
Toss together the kale, cabbage, broccoli stems, and included toppings.
Add the dressing included with the kit if desired.
Drizzle generously with Panera Asian Sweet Dressing and toss well.
Serve immediately alongside the grilled ribeyes and mashed potatoes.
