Continuing our Series on Teatime or Anytime Treats, the feature this week is Lemon and Cream Trifle for this very special Memorial Day to honor and remember men and women of the United States Armed Forces who gave their lives in service to our country. It reminds us that many of life’s joys and privileges are protected at great cost by all those who served with devotion and courage for all of us.

We have great gratitude and reflect on these things as we celebrate with our families, giving thanks to them and their families who gave it all. Because of their sacrifice, we have freedom preserved and opportunities that we have today. We’re able to sit around at peaceful family gatherings, enjoying our time together with reflection and food as we pause to remember those that never returned home to their loved ones.
So, as we set our table, share a meal and give thanks, we pay tribute to them and the freedoms we have, due to them, and our eternal gratefulness endures forever. In this way, our simple dessert shared together becomes part of our honoring and unending respect, love, and to the abiding importance of family and country.

Memorial Day weekend is a wonderful time to serve a light and refreshing dessert such as Lemon and Cream Trifle. Summer is upon us; spring is in the rearview mirror. We gather under patios, and palapas, near the water or around long tables under the breezeway for fun, food and fellowship. The creamy goodness of the freshly whipped cream and the bright citrus bite of the lemon curd are just right for warm afternoons, conversation, togetherness and remembrance.

This is a wonderful airy dessert and great for spring and summer occasions when lighter desserts are preferred. It’s simple and versatile, as well as beautiful and just right for an elegant tea, bridal shower, luncheon, Mother’s Day brunch, garden party, baby shower, garden party or backyard barbeque. We’re having ours with BBQ. Hey, we’re in Texas!

What I love about this Lemon and Cream Trifle is that it’s easy to make and gorgeous. You can make it ahead and let it chill, all the while prepping for your party and letting you chill! The pound cake we used was a snap to cube into bite-sized pieces. Assembling everything was just a matter of layering cake cubes, lemon curd and whipped cream, then repeating until the dish was filled.

Served in a crystal bowl or individual glass dishes, the dessert adds an elegant touch to our holiday table. It pairs beautifully with fresh fruit, tea sandwiches, scones with clotted cream, and delicate pastries without being overwhelming. We used raspberries on ours, but is lovely with blueberries, strawberries, or thin lemon slices.

For beverages, it is superb with prosecco (my fav), Earle Grey Tea, English Breakfast Tea, sparkling water, champagne, or chilled white wine. Whether served formally, or with family and friends casually at home, Lemon and Cream Trifle brings freshness and celebration to any table.

Lemon and Cream Trifle
Prep Time: 15 minutes
Serves: 6-8
Description: This light and airy dessert is the perfect ending to a high tea, luncheon, shower, Mother’s Day brunch, garden party or BBQ. Bright lemon curd pairs beautifully with soft cake and whipped cream. It is refreshing, elegant, and stunning when layered. Watch for a trifle thief, they’ll haul it off in a quick minute!
Ingredients:
- 1 Sponge or pound cake, cubed
- 1 jar lemon curd
- 3 cups heavy cream
- 3 tbsp sugar
- Lemon zest (optional)
- Fresh fruit for topping, raspberries, blueberries, or strawberries (optional)
Directions:
1. Whip cream with sugar until soft peaks form.
2. Layer cake, lemon curd, and whipped cream.
3. Repeat layers and finish with cream and zest.
4. Chill before serving.
