Continuing our Series on Teatime at Home: Simple Elegance, the feature this week are Smoked Salmon Crostini, which have been made by my family, in one form or another, forever. You can use a baguette and put olive oil and toast it lightly, which is supergood, but I’ve come to love these toast rounds that most large markets make and sell that are just the ticket. They are crunchy, hold up well when served and have seasonings that are ideal with the cream cheese mixture.

These refined little tidbits are wonderful appetizers that guests can grab and go when milling around at any gathering. They make entertaining easy and are ideal in spring or summer settings, whether outdoors, on a porch, or on the water, they bring elegance and grace to any holiday soiree.
We have served these salmon and dill toast rounds at cocktail parties, for holidays, birthdays, bridal showers, and garden events. Their small, stylish presentation makes them just right for everyday hosting and mingling, and for a crowd, or when a few friends make an impromptu stopover.

The salmon that we use is smoked, tender and melts in your mouth. We get it at Sam’s Club and it’s surprising that we have enough left to make these wonderful crostini at all, they’re often gobbled up as they are unpacked, even before they hit the refrigerator! And, I can’t say who would do such a thing…

These little beauties pair well with any fresh fruit, especially melon, grapes, and berries, well as deviled eggs, bite-size quiches, cucumber salad, and many finger sandwiches for a light spread. We especially like them for everyday hors d’oeuvres before holiday brunches as they satisfy, but do not compete with the main course, or sweets, and yet, complement any table.

Many bubbly beverages are lovely with these crostini-champagne, Prosecco, sparkling water, flavored and plain, as well as lemonade, crisp white wine, such as Sauvignon Blanc, and iced tea. All of these enhance their delicious, delicate and fresh flavor.

What I especially like about preparing these crisp toast rounds, is that they are light and airy, and the cream cheese and dill provide an appealing base, allowing the citrusy tang of the lemon and silky salmon to shine without overpowering the palate. Each bite is pleasing and well-rounded and just right. The lemon also creates brightness, along with the dill, which adds a herbaceous note that is refreshing and timeless in any setting. No matter how you serve them, on a tray passed around, or treasured family platter, these are sure to bring a smile and polish to any table. They are a favorite of ours, hope you love them!
