A bowl of fresh Guacamole and Pico de Gallo are the secret sauce to any meal with Mexican food! Many times, they are served together in one dish with warm, salty, crisp fried tortilla chips. I can just taste it now. Both of these dishes are as much a part of my life since I was a young girl as shrimp, fish and crab, while living along the Texas Gulf Coast. Both dishes were served alongside tacos, enchiladas, tamales, taco salad and of course, chili con queso, that golden melted cheese goodness that we still manage to eat every chance we get!

Fresh guacamole is one of those simple recipes that never goes out of style. Made with ripe avocados, tart lime juice, flavorful white onions, juicy tomatoes, and fresh cilantro, it brings together lively flavors that are refreshing, satisfying, and down home in Texas and across the country. Guacamole is incredibly versatile and complements dozens of dishes.  Pico de Gallo is another simple dish that we love with a combination of ripe tomatoes, crisp onions, fresh cilantro, and lime juice that creates a colorful, flavorful topping that adds freshness and zest to almost any dish. Its vibrant flavors make it a staple on taco nights, backyard cookouts, and family get-togethers.

Pico de Gallo is wonderfully versatile because it requires no cooking and comes together in a flash. The fresh vegetables retain their natural crunch, while the lime juice ties everything together with an enticing citrus note. I remember our favorite Mexican restaurant when I was growing up, from the moment we got out of our car, we were welcomed with the smell the tortilla chips frying, the aroma of fresh onions and tomatoes, the cumin, Mexican oregano and chili powder, all delighting and teasing our senses. We salivated as they set down hot corn chips and zesty salsa. So even today, I know that for easy entertaining, I can put a bowl of each of these, Guacamole and Pico De Gallo in the center of the table with tortilla chips and watch all of it disappear, quick as I put it out! Classic Fresh Guacamole Recipe

Description: Fresh guacamole is one of those simple recipes that never goes out of style. Made with ripe avocados, bright lime juice, crisp onions, juicy tomatoes, and fresh cilantro, it brings together vibrant flavors that are both refreshing and satisfying, making others want to take and swipe the goodness right off of your plate!

Ingredients:

 4 large ripe avocados

 1 medium Roma tomato, seeded and finely diced

 ½ cup finely diced white onion

 2 tablespoons fresh cilantro, chopped

 Juice of 2 limes

 1 teaspoon kosher salt

  ½ teaspoon black pepper

 ¼ teaspoon Tony Chachere’s Original Creole Seasoning (optional)

 1 small jalapeño, seeded and finely minced (optional)


Instructions:

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a medium mixing bowl.

  2. Add the lime juice and gently mash the avocados with a fork until the mixture reaches your desired consistency. Some people prefer it smooth, while others enjoy a chunkier texture.

  3. Stir in the diced tomato, onion, cilantro, salt, black pepper, Tony Chachere’s seasoning, and jalapeño if using.

  4. Mix gently until all ingredients are evenly distributed throughout the guacamole.

  5. Taste and adjust seasoning as needed, adding additional lime juice or salt if desired.

  6. Serve immediately or cover tightly with plastic wrap pressed directly onto the surface of the guacamole and refrigerate until ready to serve.

Fresh Pico de Gallo Recipe


Description: This is the essence of explosive color and flavor as ruby-red tomatoes, crisp white onions and vibrant green cilantro are all brought together with the sparkle of freshly squeezed lime juice. It’s brightness ads zest to grilled shrimp tacos, fajitas, or crispy tortilla chips. Don’t be surprised when someone scoops the whole enchilada right off your plate and disappears into the night!


Ingredients:

 6 medium ripe Roma tomatoes, diced

 1 medium white onion, finely diced

 1 jalapeño pepper, seeded and finely minced (optional)

 ½ cup fresh cilantro, chopped

 Juice of 2 limes

 1 teaspoon kosher salt

 ½ teaspoon freshly ground black pepper


Instructions:

  1. Wash and dry all vegetables thoroughly.

  2. Dice the tomatoes into small, even pieces and place them in a large mixing bowl.

  3. Add the diced onion, jalapeño (if using), and chopped cilantro.

  4. Pour the fresh lime juice over the vegetables.

  5. Sprinkle with salt and black pepper.

  6. Gently toss until all ingredients are evenly combined.

  7. Let the Pico de Gallo rest for 10 to 15 minutes before serving to allow the flavors to meld together.

  8. Taste and adjust seasoning if needed.


Serving Suggestions:

  • Serve with tortilla chips as an appetizer.

  • Spoon over grilled shrimp tacos, catfish tacos, or fish tacos.

  • Use as a topping for grilled chicken, steak, or barbecue shrimp.
