From Garden to Table: Honey Roasted Carrots

Spring feels like a breath of fresh air as I open windows all over the house. Bright sunlight abounds and birds chatter with cheerful song; the world outside begins to wake up again. In our family, spring means spending as much time as possible outdoors, walking through the yard to see what has survived winter, noticing the first green shoots pushing through the soil, and feeling invigorated.

Gardening becomes one of our most joyful rites of the season, as garden beds are turned and refreshed, the soil smells rich and alive! Our spring plantings often include lettuce, spinach, herbs, and shallots, followed by tomatoes and squash once the weather settles. We love planting seeds, knowing they will bring delicious and healthy meals for the season to nourish our body and spirit.

As our Spring garden produces plants for harvesting from fall plantings-carrots, oregano, chocolate mint, Jersey kale, lavender, bulb onions, and greens, the kitchen changes as well. Meals are lighter and brighter, with fresh salad, crisp lettuces-usually romaine and iceberg, spinach, chives, then tomatoes and squash, served with a simple vinaigrette. Lemon becomes a favorite ingredient, adding brightness to fish, roasted vegetables, or a stupendous chicken dish.

Spring soups are lighter too, vegetable soup with fresh herbs or a delicate broth filled with and carrots, squash and kale. Fruit begins to take center stage in desserts: strawberries, citrus, and light cakes that feel refreshing, rather than rich. Meals are fresh, colorful, and full of life.

Spring also brings adventure. Our family looks forward to spring break, a time to relax and just be. We live on the coast; we love driving along the beach with its positive ions and taking a lovely scenic drive through countryside filled with blooming flowers. 


At home, spring is a wonderful time for simple pleasures, walking in the evenings, as backyard gatherings return to grilling outside. We grill hamburgers, hotdogs, sausage and shrimp frequently. Paired with a fresh plate of lettuce, tomatoes, onions and avocados, a homemade hamburger can satisfy like none other! A casual cookout, planting flowers, or reading a book on the porch can feel like a truly welcoming spring season. Further, festivals, farmers markets, and outdoor concerts invite us outside to enjoy community and sunshine.

Spring is also a natural time for renewal of life itself. Just as gardens are cleared and replanted, many people use spring as a moment to refresh their routines. It may begin with something simple like cleaning and organizing the home, opening windows, letting fresh air circulate, and clearing away clutter, oh now doesn’t that sound fun!


Spring also encourages healthier habits. People often walk more regularly, spending time outdoors, and return to activities that energize them. It may be the season to begin a new hobby, reconnect with friends, cook healthier meals, or spend more time in nature. Here, my dianthus make me smile as they wave prettily from the front flower bed as I pass them coming through the breezeway. Longer daylight hours invite productivity and creativity, inspiring us to set new goals, or slow and appreciate simple everyday beauty.

One of my favorite things are carrots fresh out of the garden that are roasted with olive oil and sea salt. It is truly special after stepping into the garden, pulling fresh carrots from the earth, and transforming them into a dish that feels both simple and extraordinary. This honey roasted carrots recipe brings out the natural sweetness that only freshly harvested vegetables can offer. In our family, they have become a favorite dish, one that feels just as at home on a quiet spring evening as it does on a beautifully set holiday table.

Honey Roasted Garden Carrots Recipe

Description The aroma alone is enough to make everyone storm into the kitchen. As the carrots roast, the honey caramelizes, mingling with olive oil and a touch of sea salt to create an inviting fragrance. Fresh from the oven, they are tender yet slightly crisp at the edges, with a deep golden glaze that tastes as sweet as it smells. Each bite carries the essence of the garden, earthy and sweet, so watch yours closely-carrot pirates will lift them off your plate before you scan say, “thief!”


Ingredients (Serves 6):

  • 2 pounds fresh garden carrots, peeled and trimmed

  • 3 tablespoons honey

  • 2 tablespoons olive oil

  • 1 teaspoon sea salt

  • ½ teaspoon freshly ground black pepper

Directions:

  1. Preheat oven to 400°F (200°C).

  2. Wash, peel, and trim carrots. If large, slice lengthwise for even roasting.

  3. In a large bowl, combine honey, olive oil, sea salt, and pepper.

  4. Add carrots and toss until evenly coated.

  5. Spread carrots in a single layer on a baking sheet.

  6. Roast 30-35 minutes, turning once halfway through, until tender and caramelized.


Serving Suggestions:

  • Roasted chicken or turkey

  • Glazed ham

  • Grilled filet mignon

  • Pork tenderloin or pork chops

  • A fresh spring salad with warm bread
